Crafty Recipe - BELTS - Bacon, Egg, Lettuce, and Tomato Sandwiches

BELTS - Bacon, Egg, Lettuce, and Tomato Sandwiches

This twist on an old favorite is a great way to use up extra eggs and sneak some extra protein in this much loved, kid friendly sandwich. Try it for lunch, or even a breakfast treat that they will love!

4 slices Italian bread
2 tablespoons mayonnaise
4 thick tomato slices
2 hardboiled eggs, thickly sliced
3 slices cooked bacon, halved
4 romaine lettuce leaves, halved

Place the bread on a work surface and spread each slice evenly with about 1/2 tablespoon mayonnaise. Top two of the slices of bread with the tomato. Then distribute the egg slices, bacon, and lettuce evenly on top of the tomatoes. Top with the other slice of bread, mayonnaise side down. Cut in half and serve.

Makes 2 adult or 4 kid sized sandwiches.

Preparation Time: 10 minutes
Total Time: 10 minutes
